Tomorrow is both Cinco de Mayo and the 138th running of the Kentucky Derby, so iCookbook is offering up this incredibly fun (and incredibly easy!) Mango-Lime Virgin Margarita! The basic recipes is so simple, and since it makes two servings it’s perfect for sharing. You’ll have no problem whipping up enough to share with all your guests no matter what you’re celebrating this weekend.

Mango-Lime Virgin Margarita

Yield: Makes 2 servings

Mango-Lime Virgin Margarita

Lime slices
Coarse salt
1 large ripe mango, cubed (1-1/4 to 1-1/2 cups)
1 cup ice
1/2 cup fresh lime juice
1/3 cup water
1/4 cup sugar
3 tablespoons orange juice
Additional lime slices
Rub rim of margarita glasses with lime slices; dip in salt.
Combine mango, ice, lime juice, water, sugar and orange juice in blender; blend until smooth. Pour mixture into prepared glasses. Garnish with lime slices.
